Shiitake Ginger Broth Recipe

A well-flavored broth is a beautiful treasure! This broth can be sipped and enjoyed on its own, or used as a base or ingredient for other dishes like ramen, pastas, soups, and stews.

Ingredients

  • 2 cups organic dried shiitake mushrooms
  • 2 Tbsp EMPOWdER blend of your choice
  • 1 tsp organic garlic granules
  • 1 1/2 tsp organic onion powder
  • 1 tsp soy sauce or tamari
  • 1 tsp Kiawe Smoked Sea Salt
  • 1/2 tsp organic Ginger Root powder
  • 5 cups vegetable stock, water, or a combination of stock and water + 4 Tablespoons water

Directions

  1. Mix together shiitake mushroom powder, garlic granules, and onion powder in a small bowl.
  2. Stir 4 Tablespoons water into the powders and stir to make a paste.
  3. In a medium saucepan on medium heat, scoop in paste and gently whisk with 5 cups stock until smooth and well combined.
  4. Add soy sauce and salt and bring to a simmer. Drop in dried shiitake mushrooms and allow to simmer for 30 minutes or more.
  5. Remove the shiitakes and use for Pickled Shiitake Mushrooms. See pro tip.
  6. Whisk in 1/2 teaspoon of ginger powder (more, if you like it extra zippy.)
  7. Ladle into bowls or mugs and garnish with fresh green onion or chives.

 


Magic Mushroom Umami Salt

Ingredients:

  • 50g of EMPOWdER blend of your choice
  • 1 cup Sea Salt Flakes
  • 3 tablespoons chilli (red pepper) flakes
  • 2 tablespoons dried thyme
  • 1 tablespoon freshly ground black pepper

Combine in a large bowl or sealed jar and stir/shake well, or blend briefly for finer salt.

EMPOWdERed Mushroom Gravy

It is always handy to have delicious gravy recipes in your repertoire! Especially vegan or vegetarian versions of this classic comfort dish. This gravy makes up easy and holds its consistency well.

Ingredients

  • 2 Tbsp organic Sesame Oil
  • 2 Tbsp EMPOWdER blend of your choice
  • 2 Tbsp flour (I use organic white flour, but wheat flour would work well too)
  • 1 1/2 tsp organic Onion powder
  • 1 1/2 tsp organic Garlic granules
  • 1/2 tsp organic Marjoram
  • 1/2 tsp organic Thyme leaf
  • 1/2 tsp Sea Salt
  • 1 1/2 - 2 cups vegetable stock
  • 1/4 cup wine (red or white) or apple cider vinegar
  • Fresh-ground Pepper to taste

Directions

  1. Heat sesame oil in a sauce or sauté pan.
  2. Meanwhile, combine shiitake mushroom powder, flour, onion powder, and garlic granules in a small bowl.
  3. Once oil is hot, but not smoking, whisk in the powder mix and combine to make a roux (a thick paste).
  4. Add the wine or apple cider vinegar to de-glaze and whisk quickly and well.
  5. Slowly whisk in the stock and stir well.
  6. Stir in marjoram, thyme, and sea salt, and allow gravy to cook on medium heat until it thickens and just starts to boil.
  7. This should take about 3-5 minutes.
  8. Stir frequently during the heating.
  9. Once gravy is a thick consistency, add freshly-ground pepper and serve.
